Make this tempting recipe of Aloo Paratha and enjoy with a generous helping of butter, yogurt or mango pickle. Adding grated cheese as a variation will make this paratha even more tempting!
Ingredients for potato stuffing:
Oil – 2 Tbsp
Onion – 1 medium finely chopped
Salt – ½ Tbsp
Ginger-Garlic & Green Chilli – 2 Tbsp crushed
Roasted Cumin Powder – 1 Tbsp
Chaat Masala – 1 Tsp
Garam Masala – ½ Tsp
Lemon juice – ½ squeezed
Potatoes – 4 boiled and mashed
Cilantro – handful chopped
Ingredients for Dough:
Whole Wheat flour – 2 cups & a little more for dusting
Water (lukewarm) – About 1 cup
Salt – 1 Tsp
Oil – 1 tbsp
Stuffing:
1. Heat oil, add onions and sauté. Now add salt and crushed ginger-garlic-green chilli and sauté.
2. Add cumin powder, chaat masala, garam masala, lemon juice and boiled mashed potatoes. Stir well and add chopped cilantro.
3. Set aside.
Dough:
- Sift 2 cups of whole-wheat flour through a sieve and add salt. Now add close to 1 cup of lukewarm water, in parts, as you keep mixing the dough.
- Continue to add water and mix till the dough picks up all the flour.
- Knead for a good 5-6 minutes.
- Add about 1 Tbsp oil and knead again.
- Divide the dough into golf ball sized portions of equal sizes.
- Cover the dough balls with a moist cloth or paper towel.
Paratha:
- Take a ball, flatten it with your hands and dust it with flour. Roll it into a round shape roti using a rolling pin and a flat surface.
- Place the potato stuffing in the center of the roti. For variation, you can also add some grated cheese.
- Hold the edges and start gathering them towards the center and bring them together. Make a dough ball out of it.
- Now roll it gently using the flour to dust. Make sure the stuffing doesn’t come out, roll it into a flat paratha
- Meanwhile, heat a flat skillet/tava and put the rolled roti on it. The base of the paratha goes on the top of the pan for 15 seconds ~high flame.
- When you see small bubbles, flip it and let the other side cook evenly.
- Add a few drops of oil/ghee and use a spatula to press the paratha lightly.
- Cook on both sides pressing lightly.
- Serve hot with a dollop of butter, yogurt or pickle.
