Easy to make Khaman Dhoklas! Steamed savory snack made with gram flour/chickpea flour, can be served with Green chutney. Extremely delicious and yummy, do give it a try!
Ingredients for Khaman Dhokla:
Chickpea Flour/Besan – 1 Cup
Semolina/Rava – 1 ½ Tbsp
Citric Acid – ½ Tsp
Sugar – 2 Tbsp
Salt – ½ Tsp
Turmeric – a pinch
Ginger-Green Chilli Paste – 2 Tsp
Lukewarm Water – ¾ Cup
Baking Soda – ¾ Tsp
Baking Powder – ½ Tbsp
For Tempering:
Olive Oil – 2 Tbsp
Asafoetida/Hing – ¼ Tsp
Mustard Seeds – ½ Tbsp
Green Chillis -2 nos (slit)
Curry Leaves – 8-10
Water – ¼ Cup
Sugar – 1 Tbsp
Chopped Cilantro – handful
Grated Coconut – for garnish
Method:
1. Sift chickpea flour/besan in a large bowl.
2. Add Semolina/Rava, Citric Acid, Sugar, Salt, Turmeric, Ginger-Green Chilli Paste and mix well.
3. Add lukewarm water and mix well to remove any lumps.
4. Add Baking Soda, Baking Powder and 2 Tbsp Water, mix thoroughly and the batter will rise instantly.
5. Grease a plate and pour batter immediately.
TIP: Do not let the batter rest after you add the baking soda and baking powder, you need to steam immediately.
6. Place the plate in steamer and steam for 12-13 minutes.
TIP: If a knife inserted in the Dhokla comes out clean, the Dhokla is ready.
7. For Tempering, heat oil in a pan on High heat.
8. Add Asafoetida/Hing, Mustard Seeds, slit Green Chillis, Curry leaves, Sugar and Water.
9. Pour the tempering on prepared Dhoklas.
10. Sprinkle some freshly grated coconut & cilantro.
11. Cut the Dhoklas into desired shape and Serve!
