Avocado Paratha

Make this tempting recipe of Avocado Paratha and enjoy with a generous helping of butter, yogurt or mango pickle. Adding grated cheese as a variation will make this paratha even more tempting!

Ingredients for potato stuffing:

Small Potatoes – 8 nos. boiled and mashed
Green peas (frozen)– ½ Cup
Corn (frozen) – ½ Cup
Oil – 2 Tbsp
Cumin seeds – ½ Tsp
Ginger Garlic Paste – ½ Tbsp
Kitchen King Masala – 1 Tsp (Optional)
Black Pepper Powder – ½ Tsp
Anardana Powder – ½ Tsp (Optional)
Amchur Powder – ½ Tsp
Salt – 2 Tsp
Cilantro – chopped for garnish
Finely chopped Green Chilli or red pepper flakes – as per taste

Ingredients for Dough:
Whole Wheat flour – 2 cups & a little more for dusting
Water – About ½ cup
Avocados – 2 small mashed
Salt – ½ Tsp
Ajwain seeds (Carom seeds) – ½ Tsp
Oil – 1 Tsp
Ghee or Butter for application

Stuffing:
1. Heat 2 tbsp. oil in a wide pan.
2. Add cumin seeds, after they crackle, add ginger-garlic paste and stir well.
3. Now add frozen green peas and corn. Mix well.
4. Add Kitchen king masala, black pepper powder, anardana powder, amchur powder and salt. Mix well. At this point feel free to add chopped green chillies or crushed red pepper flakes if you want to make it spicy.
5. Cover and cook for 5 minutes.
6. Once the green peas and corn are cooked, add boiled and mashed potatoes. Mix well.
7. Cover and cook for 3 minutes.
8. Finally add chopped cilantro. Mix well and keep aside.

Paratha:
1. Take a ball, flatten it with your hands and dust it with flour. Roll it into a round shape roti using a rolling pin and a flat surface.
2. Place the corn potato stuffing in the center of the roti. For variation, you can also add some grated cheese.
3. Hold the edges and start gathering them towards the center and bring them together. Make a dough ball out of it.
4. Now roll it gently using the flour to dust. Make sure the stuffing doesn’t come out, roll it into a flat paratha
5. Meanwhile, heat a flat skillet/tava and put the rolled roti on it. The base of the paratha goes on the top of the pan for 15 seconds ~high flame.
6. When you see small bubbles, flip it and let the other side cook evenly.
7. Add a few drops of oil/ghee and use a spatula to press the paratha lightly.
8. Cook on both sides pressing lightly.
9. Serve hot with a dollop of butter, yogurt or pickle.
