Potato Bhaji/Aloo Sabzi

This recipe will sure take you back to the memories of mamma’s home cooked food and remind you instantly of your school tiffin box. A simple and easy to make Potato Bhaji recipe, can be served with Chapati/Puri or plain rice and Dal.

Ingredients for Potato Bhaji:

Boiled Potatoes – 2 nos
Olive Oil – 2 Tbsp
Cumin Seeds – 1 Tsp
Mustard Seeds – 1 Tsp
Asafoetida/Hing – ¼ Tsp
Turmeric Powder – ½ Tsp
Salt – 1 Tsp
Curry Leaves – 8-10
Green Chillis -2 nos (adjust as per taste)
Chopped Cilantro – handful

Method:

1.    Boil 2 Potatoes
TIP: You can either boil potatoes on stove-top or microwave them.
2.    Heat oil in a pan on High heat.
3.    Add Asafoetida/Hing, Cumin seeds, Mustard Seeds, Turmeric Powder, Salt, Green Chillis, Curry leaves and let it crackle.
4.    Now add mashed boiled potatoes and mix well for 2-3 minutes on high heat.
5.    Add Cilantro and mix well for 2-3 minutes on high heat.
6.     Serve with Chapatis/Puris or Plain White rice & Dal!
