Caramel Custard Flan

Ingredients for Caramel Custard Flan:

Milk – 2 Cups
Sugar (for Caramel) – ¼ Cup
Sugar (for Milk) – ¼ Cup
Vanilla Extract – ¾ Tsp
Salt – a pinch
Eggs – 3

Method:

1.    Add Sugar in a pan and keep stirring for 5-6 minutes until brown on medium heat.
2.    Pour prepared Caramel into Ramekins and spread around, keep aside.
3.    Simmer Milk in another pan for 6-7 minutes on medium heat. Add sugar and stir around.
4.    Whisk 3 eggs in a wide bowl; add vanilla extract and a pinch of salt.
5.    Temper the egg mixture with hot milk; keep whisking continuously to avoid cooking of eggs.
TIP: Exercise caution while doing this, we don’t want the eggs to cook.
6.    Strain the prepared mixture and fill Ramekins with it.
7.    Bake the Ramekins in a water bath at 350°F for 45-50 minutes.
TIP: You know the flan is ready when a toothpick inserted in the flan runs clear.
8.    Chill in refrigerator for a day or at least 2 hours.
9.    Dip the Ramekins in hot water to loosen the caramel at the bottom and unmold.
10.    Serve chilled!
