Vegetable Pulao Recipe

Ingredients for Vegetable Pulao:

Basmati Rice – 1 ½ Cup Cooked
Green Peas – ½ Cup Par-boiled
Green Pepper – ½ chopped
Ginger – 1 inch piece grated
Salt – To taste
Ghee – 1 Tbsp
Raisins – 18-20 pieces
Cashews – 10-12 pieces
Carrots – ½ Cup chopped
Bay Leaves – 2 nos
Cardamom pods – 2 nos
Whole Black Pepper – 5 nos
Cinnamon – 1 inch piece

Method:

1.    Heat Ghee in a pan, add all the whole spices: bay leaves, cardamom pods, cinnamon, black pepper and cloves and stir around until aromatic, approx. 5 seconds.
2.    Now add grated ginger and sauté.
3.    Add chopped Carrots and sauté.
4.    Now add Cashews and Raisins.
5.    Season with Salt.
6.    Now add parboiled Green Peas.
TIP: You can microwave green peas for 3 minutes on high with a little water.
7.    Add chopped Green Pepper.
8.    Now add cooked Basmati Rice and stir around.
9.    Enjoy hot with yoghurt or tadka dal!
