Chicken Pulao

The easiest way to prepare a delicious recipe for chicken pulao. One-pot meal idea when you are in a hurry. Give this recipe a try & I bet you’ll be making it every week!

Ingredients for Chicken Pulao:

Ghee – 4 Tbsp
Onion – 1 big sliced
Ginger Garlic paste – 2 Tbsp
Black Cardamom – 1
Star Anise – 1
Bay leaves – 2
Cinnamon – 1 inch piece
Cloves – 5
Cardamom – 3
Black Peppercorns – 8
Chicken – 500 grams
Tomato – 1 finely chopped
Red chilly powder – 1 Tsp
Coriander Cumin Powder – 1 Tsp
Garam Masala – ½ Tsp
Chicken bouillon cube – 1
Kasoori Methi (Dried fenugreek leaves) – 1 Tsp
Yoghurt – ½ cup
Basmati Rice – 2 cups (washed & soaked for 30 minutes)
Water – 4 cups (double of rice)

Method:

1. Take a wide pan and heat up ghee in it on high heat.
2. Add sliced onions and sauté until golden brown. Reserve half the fried onions for garnish.
3. Now to the same pan, add all the whole spices: Black Cardamom, Star Anise, Bay leaves, Cinnamon – 1-inch piece, Cloves, Cardamom & Black Peppercorns – 8. Stir well.
4. Now add chicken, stir well.
5. Add ginger-garlic paste, stir & cook until chicken becomes translucent.
6. Add tomato, red chilly powder, coriander-cumin powder, garam masala, chicken bouillon cube & kasoori methi. Mix well.
7. Add yogurt, stir & cover & cook for 5-7 minutes on high heat.
8. Add basmati rice, washed & soaked for 30 minutes. Add water as well.
9. Once the rice starts boiling, switch to medium heat.
10. Cook for about 6 minutes on medium heat until water is reduced a little.
11. Cover & simmer for 10-15 minutes on low heat.
12. Mix gently, add fried onions and chicken pulao is ready to serve.
13. Serve hot with some yogurt raita!
