Cornflakes Crusted Chicken Tenders with Avocado Dip

A wonderful and quick recipe for a last minute meal idea, chicken tenders crusted with cornflakes and served with delicious avocado dip. Totally toddler friendly and healthy! I’m sure your family will love this and will ask you to make it frequently!

Ingredients for Cornflakes Crusted Chicken Tenders:

Cornflakes – 2 Cups
Onion Powder – ½ Tsp
Garlic Powder – ½ Tsp
Salt – ½ Tsp
Black Pepper Powder – ¼ Tsp
Sugar – ½ Tsp
Dried Dill – ½ Tsp
Dried Parsley flakes – 1 Tsp
Paprika – ¼ Tsp
Egg – 1 nos
Milk – ¼ Cup
Chicken – 2 breast pieces cut into tenders
Avocado – 1 ripe
Yoghurt – 2 Tbsp
Salt – ¼ Tsp
Garlic Powder – ¼ Tsp
Lemon juice – ½ Tsp

Method:
1. Add cornflakes to a food processor. Add salt, black pepper powder, paprika, onion powder, garlic powder, sugar, dried dill and dried parsley flakes. Grind it to a coarse powder.
2. Take egg in a bowl, add milk and whisk it well. Keep aside.
3. Cut chicken into tenders, season with salt & pepper, mix well & keep aside.
4. Dip chicken tenders in milk & egg mixture and coat it well with cornflakes.
5. Line the chicken tenders on a greased baking tray. Brush the chicken tenders with olive oil.
6. Bake in pre-heated oven at 220°C or 425°F for 15 minutes.
7. Make the avocado dip in the meantime.
8. Cut ripe avocado, add salt, garlic powder & lemon juice. Blend it and dip is ready!
9. Serve the chicken tenders hot with avocado dip!
