Okra Fry

Bhindi/Okra/Lady’s fingers, whatever you wanna call it, this recipe will tantalize your taste buds!

Ingredients for Okra Fry:

Okra – 250 grams, slit lengthwise and chopped
Onions – 2 finely chopped
Olive Oil – 3 Tbsp
Turmeric Powder – ½ Tsp
Kashmiri Red Chili Powder – 1 Tsp (adjust as per taste)
Salt – to taste
Kokum (Optional)– 2-3 nos
Curry Leaves – A sprig

Method:

1.    Wash and dry Okra with paper towel.
TIP: Make sure you wipe the Okra completely dry after washing with water; this will prevent them from sticking too much.
2.    Trim the stem end & slit lengthwise, chop 1 inch pieces.
TIP: Make sure to check for any worms while slitting the Okra.
3.    Heat oil in a pan on medium heat.
4.    Add chopped onions, salt and cover & cook until lightly browned, approx. 8-10 minutes.
5.    Now add Turmeric Powder & Kashmiri Red Chilli Powder, mix around well.
6.    Add Curry leaves, Kokum & chopped Okra.
7.    Cook for 8-10 minutes on medium heat without covering.
TIP: Do not cover & cook after adding Okra, steam or water will cause them to become sticky.
8.    Serve with Chapatis or Plain White rice & Dal!
