Palak Paneer

How about some garlicky Palak Paneer recipe today?  For garlic lovers, I am sure you all will enjoy this recipe. Enjoy warm with plain rice and or chapati, phulka!

Ingredients for Palak Paneer:

Paneer – 10oz, cubed
Onion – ¼ Cup finely chopped
Tomato – ¼ Cup finely chopped
Spinach leaves – 18oz
Garlic – 2 Tbsp minced
Oil – 2 Tbsp
Cumin Seeds – ½ Tsp
Garam Masala Powder – ½ Tsp
Kashmiri Red Chilli Powder – 1 Tbsp
Turmeric – ¼ Tsp
Coriander-Cumin Powder – ½ Tbsp
Lemon – ½
Salt – 1 Tsp

Method:

1. Bring water to boil and put Spinach leaves in for 30 seconds to a minute until you see a bright Green color. Transfer immediately to ice cold water & the blend to a puree
TIP: This step of transferring spinach to ice cold water is very important to stop the cooking process of Spinach.
2. Heat Oil on medium heat, add cumin seeds.
3. Add Garlic, stir for 1-2 minutes.
4. Now add finely chopped onions & salt to speed up the cooking process.
5. Cook onions until golden and add finely chopped tomato. Cook until oil starts separating.
6. Now add Turmeric Powder, Kashmiri Red Chilli Powder, Coriander-Cumin Powder & Garam Masala, stir well for 1-2 minutes.
7. Add Spinach puree, stir for a minute. Add ½ cup water as well.
8. Now add Paneer cubes, stir for 1-2 minutes.
9. Finish off with some Lemon juice.
10. Enjoy warm with plain rice and or chapati, phulka!
