Gulab Jamun

Why go to the restaurant when you can make some seriously awesome and delicious Gulab Jamuns at home? When describing the Gulab Jamuns, one might say they are spheres of dough deep-fried in oil and then soaked in sugar syrup. However, that would be a sinfully wrong way of describing such a succulent delicacy. Restaurants have completely miss-represented this dessert by skipping on the cardamom to save money, skipping on the surprises in the centers to save time and finally skipping on the heating of the dessert before serving and saving the people from an opportunity they would really not want to miss. Ingredients for Gulab Jamun:

Mava/Khoya – 250 grams
Milk – 1 Tbsp
Refined flour (Maida) – 4 Tbsp
Raisins – 20-22 nos
Vegetable Oil/Ghee – 1.5 cups for frying

Ingredients for Sugar Syrup:

Sugar – 1.5 cups
Water – 2 cups
Saffron – a pinch
Cardamom Powder – ¼ Tsp

Method:

1.    Crumble the Mava, add 1 tbsp Maida each time while kneading until mixed well. Add milk and knead again.
TIP: Mava generally has a lot of fat content; make sure you use chilled mava for kneading so it does not secrete a lot of fat due to the warmth of your hand while kneading. We need the Mava to be smooth and not lose all its fat content.
TIP: You might need more or less milk depending on the consistency of the mixture, we need it to be smooth and want everything to come together.
2.    Divide into equal golf ball sized balls to make Gulab Jamuns.
3.    Stuff the Gulab Jamun balls with the secret surprise in the center (raisins).
4.    Heat 1.5 cups of vegetable oil/ghee and fry the Gulab Jamuns for approx. 2.5 minutes until they turn brown, place Gulab Jamuns on a paper towel.
TIP: Make sure you keep stirring without damaging the Gulab Jamuns for even cooking.
5.    For making Sugar Syrup, boil all the ingredients listed under Sugar Syrup for approx. 14 minutes.
6.    Soak Gulab Jamuns in sugar syrup for approx. 15 minutes before serving.
7.    Enjoy warm or cold, maybe add some Vanilla ice cream for an added twist!
