If you love eggplants, you’ll love this simple yet delicious pan fried eggplant recipe which can be served with rice and dal (lentils), with chapatis/rotis or as a side dish.
Ingredients for Fried Eggplant:
Eggplant – 1 sliced
Salt – 1 Tsp
Turmeric Powder – ½ Tsp
Oil – 2 Tbsp
Method:
1. Slice eggplant.
2. Marinate with salt & turmeric and keep aside for 5 minutes.
3. Heat oil on medium heat.
4. Fry the eggplant slices for 3-4 minutes on each side.
5. Serve hot as a side with rice and lentils or with chapati/roti.
