My take at making pav bhaji at home! One of my favorite street food and I hope it becomes yours too.
Ingredients for Pav Bhaji:
Cauliflower – 1 head chopped in florets
Potatoes – 4 nos small cubed
Green Peas – 1 Cup
Tomato – 4 + 1 nos finely chopped
Onions – 2 nos finely chopped
Green pepper – 1 nos finely chopped
Tomato Paste – 1 Tbsp
Ginger Garlic Paste – 1 Tbsp + 1 Tbsp
Pav Bhaji Masala – 5 Tbsp (I use Badshah brand)
Turmeric Powder – ½ Tbsp
Garam Masala – ½ Tbsp
Coriander-Cumin Powder – 1 Tbsp
Red Chilli Powder – 1 Tbsp + ½ Tbsp
Cumin seeds – 1 tsp + 1 tsp
Hing (Asafoetida) – a pinch
Salt – 1 Tbsp + ½ Tbsp
Oil – 1 Tbsp + 1 Tbsp
Butter – 2 Tbsp + 2 Tbsp
Water – 1 Cup + 1 Cup
Chopped onion and Cilantro – for garnish
Method:
- Heat 2 tbsp. butter and 1 tbsp. oil in a pressure cooker or instant pot (press sauté on instant pot).
- Add 1 tsp. cumin seeds and let it crackle.
- Add cauliflower florets, potatoes, green peas and 4 tomatoes.
- Now add 1 tbsp. salt, turmeric powder, coriander-cumin powder, garam masala and 1 tbsp. red chilli powder.
- Mix well and add 1 cup water. Now add 1 tbsp. ginger garlic paste. Mix well.
- If using a pressure cooker, cook for 4 whistles on a medium heat. When pressure releases naturally, open the lid.
- If using instant pot, close the lid. Cancel sauté, press pressure cook for 20 minutes. Let the pressure release by natural release (NPR)
- Mix and mash well. Keep the vegetable mixture aside.
- Heat 2 tbsp. butter and 1 tbsp. oil in a deep pot.
- Add 1 tsp. cumin seeds and let it crackle.
- Add finely chopped onions and 1 tsp. salt. Mix well.
- Add 1 tbsp. ginger garlic paste and mix well.
- Add finely chopped green pepper.
- Cover and cook for 3 minutes.
- Now add 1 finely chopped tomato and tomato paste. Mix well and cook for 3 more minutes.
- Add ½ tbsp. red chilli powder, pav bhaji masala and 1 cup water.
- Cover and cook for 2 minutes.
- Now add the mashed vegetable mixture, mix well. Cover and cook for 5 minutes.
- Serve hot with a dollop of butter, chopped onions and cilantro with pavs(buns).
