There is nothing more indulging than a warm, delicious bowl of dessert. One of the Indian favorites, if made right, is Gajar Halwa. Succulent shredded Carrots & added richness of Mava, Milk & Chopped almonds/pistachios/raisins & a little bit of Saffron does all the magic.
Ingredients:
Shredded Carrots – 500 grams
Shredded Mava – 250 grams
Water – 1 Cup
Milk – 1 Cup
Cardamom Powder – ½ Tbsp
Sugar – ¾ Cup or as per taste
Almond – 20-22 sliced
Pistachios – 2 Tbsp
Raisins – 2 Tbsp
Saffron – a pinch
Method:
1. Heat pan on high heat. Add shredded carrots and sauté for a minute.
2. Add 1 cup of water, cover and cook on medium heat for 10 minutes.
3. Stir in between, water will dry up.
4. Now add 1-cup milk, mix well.
5. Cover and cook on medium heat for 8 minutes.
6. Cook until milk dries up a little.
7. Add shredded mava and stir well.
8. Then add cardamom powder, stir well & cover and cook on medium heat for 8 minutes.
9. Add saffron, raisins, chopped almonds & pistachios.
10. Stir well and serve hot!
