Rose & Saffron Malai Sandwich

This Diwali Season, let’s make this mouthwatering dessert recipe of Rose & Saffron Malai sandwiches! It’s easy to make and be assured you will surely amaze your guests and loved ones with this delicacy.

Rose & Saffron Malai Sandwich Recipe

Ingredients for making Paneer:

Milk – 4 Cups
Lemon Juice – 1 ½ Lemon
Cold Water – a glass

Ingredients for making Sugar Syrup:

Sugar – 1 Cup
Water – 3 Cups

Ingredients for making Rose & Saffron Malai/Cream for stuffing:

Milk – ¼ Cup
Sugar – 2 Tbsp
Mawa/Khoa – ½ Cup grated
Saffron – a pinch
Yellow Color – a drop (optional)
Rose Syrup – 1 Tbsp

Method:

1.    Heat 4 cups of milk in a heavy bottom pan on low flame until boiling.
2.    Add 1 ½ lemon juice and keep stirring.
3.    Strain the paneer using muslin cloth.
4.    Pour some cold water to remove the lemon flavor from the paneer.
5.    Squeeze out the water and hang the muslin cloth for about 30 minutes to discard excess water.
6.    TIP: You can also keep heavy weight on the paneer to discard excess water.
7.    After 30 minutes, remove the paneer in a flat dish and knead well using the palm of your hand to remove any lumps.
8.    Make flat paneer balls and keep aside.
9.    Make sugar syrup, add 1 Cup sugar and 3 Cups of water in a pan. Bring to boil.
10.    Now add paneer balls. Cover & Cook for 20 minutes on medium heat.
11.    Remove the paneer balls from sugar syrup and let them rest overnight or at least 2 hours.
12.    Now lets make Rose & Saffron Malai/Cream for the stuffing.
13.    Heat ¼ Cup Milk on medium flame. Add 2 Tbsp Sugar and stir well.
14.    Now add ½ Cup grated Mawa/Khoa and stir well until the mixture thickens.
15.    Divide into two equal parts.
16.    Add a pinch of saffron and a drop of yellow food color to one part and mix well. Keep aside.
17.    Add 1 Tbsp of Rose syrup to another part and mix well. Keep aside.
18.    Let’ assemble the Malai sandwich.
19.    Squeeze out excess syrup from the paneer balls and slit them across.
20.    Now fill in with Rose Malai/Cream and saffron Malai Cream.
21.    Garnish with Pistachio powder and saffron dissolved in milk.
22.    Chill well. The yummy and delicious Malai Sandwiches are ready to eat.
