Words cannot describe how addictive this dessert is! My husband loved it so much that he has learned how to make this as well. This has become a family favorite recipe, do give it a try and let us know what you think.

Ingredients for Kanafeh:

Frozen Kataifi (shredded phyllo dough) – 250 grams (defrosted for 3 hours before using)
Unsalted Butter – 100 grams (1/2 Cup) + 1 Tbsp (for greasing)
Mozzarella cheese shredded – 200 grams (2 cups)
Ricotta Cheese – 125 grams (1/2 Cup)
Orange Food color – a pinch (optional)
Sugar – 1 Cup
Water – ¾ Cup
Lemon juice – 1 Tsp

Method:

1. Defrost frozen Kataifi (shredded phyllo dough) for at least 3 hours before use.
2. Chop up Kataifi finely.
3. Mix melted butter with kataifi and keep aside.
4. Now grease a 9 inch round baking pan with some butter and a pinch of orange food color(optional)
5. Cover the bottom and sides of the pan with half the kataifi dough and press gently.
6. Spread Ricotta cheese evenly.
7. Now spread shredded mozzarella cheese evenly and press gently.
8. Cover the top layer with remaining kataifi.
9. Bake in a pre-heated oven at 200°C or 375°F for 30 minutes.
10. In the meantime, make sugar syrup by heating sugar, water and lemon juice. Bring it to a boil and keep aside.
11. Remove Kanafeh from the oven and let it rest for 10 minutes before flipping it over.
12. Pour about 2/3rds sugar syrup on the Kanafeh and save the rest for serving.
13. Garnish Kanafeh with chopped pistachios.
14. Serve warm!
