Beans & Cheese Taquitos

Beans & Cheese Taquitos is a toddler friendly, healthy and nutritious recipe which can be made as a quick meal or snack. Its a vegetarian version, healthy as its baked. You can even shallow fry in a frying pan with a little oil if you wish to.

Ingredients for Beans & Cheese Taquitos:

Canned Red Beans – 1 Can (250 grams)
Frozen Corn – ½ Cup
Cheddar Cheese – 1 Cup shredded
Cumin Powder – 1 Tsp
Garlic Powder – ¼ Tsp
Paprika – ¼ Tsp
Salt – ¼ Tsp
Tortillas – 4 nos

Method:

1. Drain one can red kidney beans and add it to the mixing bowl.
2. Add frozen corn, salt, cumin powder, garlic powder, paprika & shredded cheese. Mix well & keep aside.
3. Brush a baking tray with olive oil or you can even use oil spray.
4. Place filling on a tortilla, roll up tightly & place the seam side down.
5. Brush the tortillas well with olive oil or oil spray.
6. Bake in pre-heated oven at 200°C or 400°F for 15 minutes.
7. Remove from the oven & flip the taquitos.
8. Brush with olive oil or oil spray.
9. Bake for another 5 minutes.
10. Serve hot with sour cream!
