A quick fix for a simple breakfast dish or a meal. Very easy to make and yummy!
Ingredients for Kanda Poha:
Oil – 3-4 Tbsp
Onion – 1 medium finely chopped
Poha/Flattened Rice – 3 Cups washed and strained
Whole Peanuts – ¼ Cup optional
Salt – 1 Tsp or to taste
Sugar – 1 Tsp optional
Cumin – ½ Tbsp
Mustard Seeds – ½ Tbsp
Turmeric Powder – ½ Tsp
Green Chillis – 2-3 slit
Lemon Juice – ½
Curry Leaves – 7-8 leaves
Cilantro – handful chopped to garnish
Shredded Coconut – 1 Tbsp
Method:
1. Heat oil on medium flame, add cumin, mustard seeds and asafoetida and let it splutter.
2. Now add onions, salt and sauté. Stir well, cover and cook for 2 minutes.
3. Add slit green chillis, turmeric, peanuts, curry leaves and sugar. Stir well.
4. Now add washed poha/flattened rice. Stir well. Cover and cook for 2 minutes.
5. Add chopped cilantro, lemon juice and shredded coconut.
6. Stir well and serve hot with a slice of lemon.
