Gujarati Carrot Sambharo

A yummy recipe for Gujarati Gajar (Carrot) Sambharo, quick and easy to make and adds a nice touch to any lunch menu. You can even call it a warm carrot salad. There are so many different varieties of sambharos, this one is made only with carrots.

Ingredients for Gujarati Carrot Sambharo:

Carrot – 3 thinly sliced
Cumin seeds – 1 Tsp
Mustard seeds – 1 Tsp
Asafoetida/Hing – ¼ Tsp
Salt – 1 Tsp
Turmeric Powder – ½ Tsp
Curr leaves – 6-7

Method:

1. Heat oil in a pan on medium heat.
2. Add cumin seeds, mustard seeds and hing. Let them splutter. Add curry leaves too.
3. Now add thinly sliced carrots and stir well.
4. Add turmeric and salt.
5. Cover & cook for 3 minutes.
6. Serve hot as a side with sabzi-roti!
